I have to say, though I like Pamela’s cookies, I was skeptical about this mix. I screwed it up and it still came out delicious so it won me over. It can come out a bit grainy or crunchy but if you get the ingredients and timing on the oven just right, it comes out very taasty!

These mixes make yummy cornbread without any gluten. Cornbread is one thing that entices me even though I know it contains wheat. Glad to have something this good so I won’t give in at restaurants.

I tried this as I had previously tried the Brownie mix which is outstanding. It was easy to mix up, love the wide variety of choices concerning the added ingredients and when it came out of the oven…OMG! I was going to start experimenting with gluten free corn bread recipes but now I won’t bother. The mixes are kind of pricey, but as a special treat they are well worth it.

I make a mexican style cornbread that is amazing with this mix. Instead of water, I add 1 jar of pimentos, and 1/2 cup jalepenos with the juice, and add 1 cup of frozen (do not thaw) corn. I also add 1/4 cup sugar, and 1/2 teaspoon vanilla. Then it has to bake for 45 minutes. It comes out very moist, and very addicting!

I was delighted to find this product as I really enjoy corn bread. This corn bread is gluten free; easy to make and tastes so darn good. In fact, if you make corn bread stuffing, use this and you will have a holiday dish your guests will be RAVING about!
Pamela has been batting a thousand with her products and this one is no exception.
